I am running quite a number of mods, but I will list the ones that make the most changes or I can remember.

oscuros oblivion overhaul
marts monster mod
francisco's mod
beautiful people
TNR all races final
qarls harvest
natural environments

That's all I can remember for the moment. I'm not as much looking for how to fix it at the moment (unless you can recommend comething) but I get a CTD from time to time about every 15 minutes so I quicksave pretty often. Is this pretty much to be expected when running lots of mods/heavy changes mods? I can live with it, but it is an issue when playing the game. If I travel to somewhere or enter an interior cell it'll crash and corrupt the autosave.

Without a full list of mods and some idea of what else you're running in the background (vista/xp/other software), it's impossible to say. You could always try playing with only one of the big 3 (ooo, mmm, frans) installed and active, as this will certainly reduce the number of other conflicts and free up more ram for game operation.

I had a similar problem, I am running all the mods you have listed except qarls harvest and my machine specs are similar. See my post here about how I fixed my frequent crashes.

P.S. I would like to run qarls harvest but I have the horse armor pack installed and slof's horses with nightmare installed. Do you know what files I should use the install for qarls harvest is wicked confusing with all the differnt file versions to choose from.

A few things could go wrong.
Quicksaves are pretty notorious for getting corrupted. It is recommended that you never use the quicksave feature, specifically, you should never load a quicksave. I only use the regular save and when I stopped using quicksaves my game got a lot more stable.

Another problem people often have is with load order. I highly recommend the utility "FCOMhelper" to sort your load order. It has helped numerous people run a more stable game.

And as an aside, with those mods you listed, you must also use FCOM to glue OOO/Frans/MMM together correctly, and FCOM requires using Wrye Bash to created a Bashed Patch. So I suggest you make sure you're doing all that too.
