I recently downloaded NifScope and Gimp in an attempt to learn how to make textures and meshes and the like, but when I went to use them I had no clue how to use them. So if anyone could point me to a good tutorial or try to expain it to me I'd be very grateful.

NifSkope is used for modifying model objects, not creating them.
GIMP can be used to create and edit textures but you would need to convert them from DDS format to something GIMP can read without worrying about loss of image quality (DDS format is a lossy format and saving in it over and over creates a very ugly and super-compressed or pixelated image)
